Baked haddock with roasted butternut squash is a delicious and healthy seafood dish that is easy to prepare. To make baked haddock, you’ll want two Fish Fixe Haddock fillets, which you can season with your favorite herbs and spices. Many people like to use a combination of salt, pepper, garlic powder, and onion powder. You can also add a drizzle of olive oil or butter to keep the fish moist and flavorful as it bakes.

Once seasoned, the haddock is baked in the oven until it is cooked through and flaky. It makes for a great main course and pairs well with a variety of sides, such as roasted vegetables, a green salad or what we suggest, roasted butternut squash.

 

 

Ingredients

Baked Haddock

You’ll need (2) 6 ounce portions of Fish Fixe Haddock

Fish Fixe Original Seasoning (Sub with salt, pepper, garlic salt)

Extra Virgin Olive Oil

Sliced lemons

Butternut Squash Puree

2 – 3 c of Butternut Squash, diced

Extra Virgin Olive Oil

Salt

Cinnamon, fresh herbs, cream, butter (optional)

Blender

Browned Butter

1 stick of unsalted butter

 

 

 

Directions

  1. Pre-heat oven to 425º
  2. Dice your Butternut Squash into 1″ cubes (or purchase from Costco the large container of diced butternut squash)
  3. Add squash to a sheet pan, toss with olive oil
  4. Place the Roasted Butternut Squash in the oven and set a timer fro 20 minutes
  5. While your squash cooks, prepare Fish Fixe Haddock according to package instructions
  6. Season with Fish Fixe Seasoning and coat lightly with extra virgin olive oil
  7. Place sliced lemons on a baking sheet and top with the Haddock
  8. Open the oven, give the squash a shake and place Haddock in the oven, set timer for 12 minutes
  9. You’ll know the squash is ready when you can squash it between your fingers, usually around 20 minutes
  10. Transfer the squash to a blender, puree and add 1/2 tsp salt.  Taste and adjust flavors as you desire – cinnammon, fresh herbs, cream, butter – all add depths of flavor but they are also delicious on their own!
  11. Start to prepare the brown butter, by heating a cast iron skillet on medium heat. Add the butter (if you slice it, it will melt more evenly) whisking frequently
  12. Once melted the butter will foam a bit, then simmer down*
  13. Watch carefully as lightly browned specks begin to form at the bottom of the pan; it should have a nutty aroma
  14. Remove from heat and pour the melted butter into a bowl to stop from cooking further
  15. Remove Haddock from oven when the fillets flake easily with a fork, between 12-15 minutes
  16. Transfer butternut squash puree to a shallow bowl and top with Haddock
  17. Finish with Brown Butter Sauce and serve warm!

Costco Hack: a large container of chopped butternut squash. * Once melted the butter will foam up a bit, then subside. Watch carefully as lightly browned specks begin to form at the bottom of the pan. Smell the butter; it should have a nutty aroma.
