Baked Tacos with Shrimp! We didn’t think tacos could get any better, until we tried baked tacos in the oven, that turn out crispy on the outside, shrimp seasoned perfectly on the inside and lots of ooey-gooey cheese! This recipe can be adjusted in so many ways and served as an appetizer or meal.

If you find your tortillas are cracking or ripping, pop them into the microwave for 20 seconds before you start the first step of assembling.

We have to say these are pretty dang kid-friendly as well.  And easy to make a batch where a few are simplified for the kiddos, and dressed up more for the adults.

 

Ingredients

You will need (2) 6 ounce portions of Fish Fixe Shrimp 

  • 1/2 c frozen corn
  • 1/2 c onion, chopped
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1 poblano, chopped (same size as onion)
  • 1 tbsp minced garlic
  • Corn or flour tortillas (we actually love the corn and flour blended tortilla for the flavor of the corn and the durability of the flour)
  • Mexican cheese, shredded

 

Directions

  1. Prepare Fish Fixe shrimp per the thawing and prepping instructions on the bag
  2. Dice shrimp and season with paprika, cumin, chili powder and salt.
  3. Set oven to 400º
  4. Saute onion and poblano for 2-3 minutes on medium-high heat
  5. Stir in garlic for 2 minutes and saute until vegetables begin to turn soft
  6. Add in shrimp and cook 3-5 minutes.  Keep the tails on for added flavor.
  7. While shrimp cooks, prep the tacos
  8. Add parchment paper to a cooking sheet.  Spray one side of each tortilla and place sprayed side down on the sheet
  9. On half of the tortilla place cheese, shrimp and vegetables and finish with a top layer of cheese
  10. Place in oven for 1-2 minutes and allow top cheese to melt a bit, then fold over tortilla to close.  The cheese will help it stay together.
  11. Bake for 2-3 min on each side until the tacos are crispy on the outside and nice and gooey on the inside
