Basil Shrimp with Avocado + Spinach + Garlic Cream Sauce

You will need (2-3) 6 oz. portions of Fish Fixe Shrimp
    • 1 lb linguine pasta (reserve 1 c pasta water)
    • 1/4 c basil
    • 1/4 tsp red pepper flakes
    • 8 oz fresh spinach
    • 5-6 whole garlic cloves
    • 1 large avocado
    • 1 tsp salt
    • 1 tsp pepper
    • 1 tbsp lemon juice
    • 1/4 c parmesan cheese
    • 3/4 c pasta water


Prepare Shrimp:
    1. Prepare Shrimp by thawing and drying thoroughly with paper towels
    2. Remove tails and season with salt, pepper, and a sprinkle of paprika
    3. Prepare linguine pasta according to package instructions – reserving 1 cup of pasta water.
Prepare the sauce:
    1. Use a blender to combine spinach, whole garlic cloves, avocado, salt, pepper, lemon juice, parmesan cheese, pasta water
      Consistency should be equivalent to a cream sauce – thin with remaining pasta water if necessary. Set aside.
    2. Bring a heavy-bottomed pan to medium-high heat, add in 2 tbsp avocado oil and sear seasoned shrimp 2-3 minutes on the first side then flip and finish cooking on the second side
    3. Stir in chopped basil and remove from heat
    4. Toss pasta in avocado sauce (if the sauce is not still warm you may need to warm it in a pot before tossing it with the pasta)
    5. Top pasta with shrimp and finish with parmesan cheese and red pepper flakes
