BBQ Cobia + Chili Lemon Butter with Chef Jean-Paul

When we started our relationship with Chef Jean-Paul, we were at the height of summer in Texas and both Jean-Paul and Fish Fixe were heavily leaning on our grills and smokers to do most of the work during dinner time.  We love to say “set it and forget it,” and BBQ Cobia ticks that box.

If you have a smoker, this recipe is for you.  While you may be only familiar with smoking meat, smoking fish is an excellent (dare we say better!) alternative.

So snap open that group text, invite some buds, throw some beer on ice, and call it a BBQ party.

To complete the BBQ Cobia recipe, you do not need a smoker.  Simply use your grill and reduce the cook time to 10 minutes.  Smear the Chili Lemon Butter on the fish every few minutes, including when you pull it off the grill.

Ingredients

You will need (2) 6 ounce portions of Fish Fixe Cobia

  • 1tbsp yellow mustard
  • 2tbsp of your favorite barbecue rub
  • 1/2 lb unsalted butter
  • 3-4 tbsp olive oil
  • 4 whites of a scallion, thinly sliced
  • 4 cloves of garlic, grated
  • 2 lemons juiced
  • 2 lemons zested
  • 5 pickled chilis minced
  • Salt and cracked pepper

Directions

  1. Thaw and prep your Fish Fixe Cobia per instructions on the package
  2. Lightly smear yellow mustard on your cobia filets
  3. Season your cobia with barbecue rub
  4. Set your smoker to 185º (Charcoal and Hickory)
  5. While smoker is coming to temp, prepare your chili lemon butter
  6. In a sauce pot add butter and olive oil and melt fully until it begins to bubble
  7. Add scallion whites and garlic to the butter and sauté on medium high heat for 3 minutes
  8. Add lemon zest and and chopped chilis and sauté in the butter for 5 minutes
  9. Turn off the heat, add lemon juice, salt and pepper
  10. Mix all the ingredients together
  11. Once butter is complete, every 15-20 minutes brush fish with chili lemon butter
  12. Cook your Cobia for 1 hour
  13. In the last 5 minutes of cooking, crank up your grill to hot and finish your Cobia over hot
    coals
  14. Drizzle with butter and serve immediately
