Broiled Salmon with Mushroom + Green Onion Sauce

About this Recipe

This recipe is simple, yet packed with flavor.  Marinating the salmon in orange juice allows for a nice caramel crisp and loads of flavor from broiling.


You will need (2) 6 oz. portions of Fish Fixe Salmon
  • 1 c fresh orange juice
  • 6 tbsp of butter, divided
  • 4 cloves of garlic, minced
  • 1 lb button or cremini mushrooms, sliced
  • 8-10 medium scallions/green onions, sliced and chopped into 2 in pieces
  • 1/2 c dry white wine
  • 1/2 c vegetable stock
  • 1/4 c Greek yogurt or heavy cream at room temperature



  • Prepare Fish Fixe Salmon by thawing and drying thoroughly with a paper towel
  • Preheat broiler on high
  • Place salmon in a baking dish, season both sides with sea salt and pepper and pour orange juice into the dish
  • Let stand for 5 minutes then flip and let stand for 5 minutes more
  • In a large skillet, melt 4 tbsp of butter over medium heat
  • Add in the garlic and sauté until fragrant
  • Add the mushrooms, season with salt and pepper then cover and cook for 5 minutes until their liquid releases
  • While the mushrooms cook, transfer salmon to a baking sheet, skin side down, and top each with 1/2 tbsp of remaining butter
  • Return to your sauce and stir in the scallions and cook on high heat until browned, about 5 minutes
  • While the scallions brown, place your salmon in the broiler about 5 inches from the top and brown for 5-7 minutes
  • Return to your sauce and add the wine, stirring for 1 minute then add the stock and cream and simmer
  • Season with salt and pepper and spoon sauce onto plates for serving
  • Remove the salmon from the broiler and slide a spatula between the skin and flesh to remove the fillet leaving the skin behind
  • Plate the salmon over the sauce and serve


Recipe Notes

Cream or yogurt can be omitted – if it is added it must be at room temperature or it will curdle
