Cajun Beurre Crawfish Smothered Redfish

You will need (2) 6 oz. portions of Texas Redfish and (1) 6 oz. portion of Crawfish Tail Meat

  • 1/3 c finely chopped green bell pepper
  • 1/4 c finely chopped scallions
  • 1 strip bacon (can sub 1 tbsp oil or butter)
  • 1/2 tbsp finely minced garlic
  • 2/3 c dry white wine
  • 2 tbsp lemon juice
  • 2 tbsp sliced green onion
  • 1/2 c diced tomatoes with juice
  • 4 tbsp butter
  • 1/2 tsp tomato paste
  • 1/2 tsp salt
  • 1/8 tsp cayenne
  • Basmati rice
  • Green onion


  1. Prepare Fish Fixe Redfish by thawing and drying thoroughly with a paper towel
  2. Prepare Fish Fixe Crawfish Tails by thawing and retaining juices from the bag
  3. Season Redfish with Fish Fixe Spice Blend (or salt and pepper) and set aside
  4. In a medium-sized pan, sauté bell peppers and scallions in bacon until fragrant
  5. Remove and discard bacon then add in wine, garlic, green onion, diced tomatoes and Crawfish Tails with their natural juice
  6. Bring to a slight simmer and then fold in butter one tablespoon at a time – continuing to stir constantly so the sauce doesn’t form hot spots and pop
  7. Reduce heat to very low and stir in tomato paste
  8. Taste sauce and adjust seasonings as desired
  9. Bring a separate pan, coated in avocado oil, to medium-high heat
  10. Once the pan reaches temperature add the Redfish to the pan and sear 4-5 minutes on the first side
  11. Add a dab of butter in the pan and swirl it around the fillets to achieve a crispy and caramel color sear
  12. Flip the fillet and continue cooking for 1-2 minutes
  13. Remove fish from the pan and smother with Cajun Beurre Crawfish
  14. Serve with basmati rice
  15. Finish with chopped green onion
