Our new Rainbow Trout was born and raised in the fresh waters of the Idaho Rocky Mountains.  Rainbow trout have been raised along the Snake River in Idaho for over a century, and delivers a high quality, sustainable product that has minimal environmental impact. 

The result of this freshwater farming process is a tender, medium texture trout that easily flakes with a fork.   It can be baked, grilled or pan fried, and a light seasoning and squeeze of lemon go a long way to enhance its mild flavor. 

In this rainbow trout recipe, you’re more than likely to have all the ingredients already in your pantry.  You’ll be well on your way to a highly nutritious, vitamin-packed dinner.


At Fish Fixe we are strong proponents of sourcing both wild caught and farm raised fish.  We only work with farms that are certified by Best Aquaculture Practices and Aquaculture Stewardship Council, the two leading U.S. certifications. 

We believe that investing in responsible aquaculture is an important key to feeding a growing population all while taking the pressure off our oceans and the most sought after wild caught species.  Freshwater rainbow trout is a superb alternative to the much loved salmon as both offer a powerhouse of Omega-3 fatty acids.


You will need (2) 5-7 ounces portions of Fish Fixe Freshwater Rainbow Trout 

  • 1/4 c almond flour (for lightly breading)
  • Salt + pepper or Fish Fixe Seasoning
  • Pinch of paprika
  • Avocado Oil
  • Fresh parsley for garnish, chopped

Almond Lemon Butter

  • 8 tbsp unsalted butter
  • 1/2 c sliced raw almonds
  • 1 1/2 tbsp lemon juice
  • Zest of 1 lemon + 2 tsp
  • 1/2 tsp salt



  1. Thaw and prep the Rainbow Trout according to the instructions on the product bag
  2. Pat the fish dry with a paper towel
  3. Season Trout with salt + pepper (or Fish Fixe Seasoning) and paprika
  4. Dredge fish in almond flour, shake to remove excess flour so the trout has a nice dusting
  5. Heat 1 tbsp of Avocado Oil until almost smoking
  6. Add filet to a hot pan and cook skin side down for 3 minutes
  7. Flip, add 1 tbsp of butter and cook flesh side down for another 2-3 minutes
  8. Remove and follow the same steps for the second filet
  9. Set both filets aside
    *Tip: Once you see crispy edges start to form, flip*
  10. Add butter to the same pan, and cook until foamy and turning brown. About 1-2 minutes
  11. Turn down heat and stir in almonds until brown.  About 1-2 minutes
  12. Remove pan from heat and stir in lemon juice, zest and salt
  13. Taste and add salt if desired
  14. Plate trout and spoon Almond Lemon Butter over the top.  Garnish with fresh parsley
