Halibut “Bryan” over Spinach Orzo Pasta

Ingredients

You will need (2-4) 6 oz. portions of Fish Fixe Halibut⁠
  • 1/4 c chopped white onion⁠
  • 2 tbsp finely minced garlic⁠
  • 1/2 c white wine
  • 1/4 c lemon juice
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 c cold butter
  • 1/3 c sliced sun-dried tomatoes
  • 2 tbsp sliced basil leaves
Spinach Orzo Pasta:
  • 1 c Orzo pasta, cooked, water reserved
  • 1 tbsp olive oil
  • 4 cloves garlic (chopped)
  • 1 white onion (chopped)
  • 1/2 c Greek yogurt (room temp)
  • 2 c raw chopped spinach
  • 1/2 c parmesan cheese
  • 1/4 tsp salt

Directions

  1. Prepare Fish Fixe Halibut by thawing and drying thoroughly with a paper towel
  2. Season with ground salt and pepper and set aside
  3. Prepare Orzo pasta according to package instructions, reserving 1/2 cup of pasta water to include in sauce
  4. In a saucepan, sauté garlic and onion in olive oil until softened then gradually whisk in the pasta water and greek yogurt
  5. Add spinach, cook until wilted then stir in parmesan
  6. Taste and season with salt and pepper. Set aside
  7. Start your sauce by using a saucepan and sauté onion and garlic in 1 tbsp of butter until softened
  8. Add the white wine, lemon juice, salt, and pepper. Simmer and reduce
  9. In a separate pan, prepare your Halibut. Sear over medium high heat for 3-4 minutes per side
  10. While Halibut cooks, return to sauce, reduce heat, and gradually add in chunks of the cold butter until melted
  11. Stir in basil and sun dried tomatoes then taste and adjust seasoning
  12. Serve Halibut over Spinach Orzo Pasta and finish with sauce
