Halibut in White Wine Lemon Dill

You will need (4) 6 oz. portions Fish Fixe Halibut
For the white wine lemon dill sauce:
  • 1/2 c finely chopped shallots
  • 2 tbsp ghee
  • 3/4 c dry white wine
  • 1/2 c salted butter
  • 3 tbsp lemon juice
  • 2 tbsp chopped dill


  1. Prepare Fish Fixe Halibut by thawing and drying thoroughly with a paper towel
  2. Coat Halibut with freshly ground pepper and sea salt. Set aside
  3. To start the sauce, sauté shallots in ghee (or avocado oil) for 3-5 minutes until fragrant
  4. Pour dry white wine into pan, bring to a boil, then reduce to a simmer and allow the wine to reduce by half
  5. To start the Halibut, bring heavy-bottomed skillet to medium-high heat
  6. Coat the bottom of the pan with 2 tablespoons of ghee or avocado oil.  Test heat by flicking water into the pan. If the water pops, the pan is ready
  7. Add Halibut to the pan and cook each side for 3-4 minutes or until you see the flesh begin to flake apart
  8. While Halibut is cooking, finish the sauce. After wine is reduced by half, add salted butter 1 tablespoon at a time, stirring constantly
  9. Add in lemon juice and chopped dill 
  10. Taste and adjust seasoning with salt and pepper
  11. Spoon sauce into the bottom of a rimmed plate
  12. Add Halibut on top and finish with a squeeze of lemon and a sprig of dill
