Baked Mediterranean Halibut en papillote 

If you are looking for a quick, healthy and tasty weeknight meal look no further than this Baked Mediterranean Halibut. Flavor packed and bursting with antioxidants and Vitamin C you will feel as good about eating this dish as you will about how simple it is to clean up your kitchen after you feast! 

Here is what you will need:

  • (2) 6 oz. Halibut fillets
  • 1/3 c sliced kalamata + green olives
  • 1/2 c halved cherry tomatoes
  • 1 c julienned peppers
  • 2-3 tbsp. of capers
  • 3 cloves chopped garlic
  • 2 tbsp. olive oil
  • sliced red onion
  • 1/4 c white wine
  • 1/2 tsp. red pepper flakes
  • 1 tbsp. lemon juice
  • 6 lemon slices
  • salt and pepper
  • 2 tbsp. butter, divided


Pro Tip: To serve, place mixed salad greens in the bottom of a medium sized dinner bowl. Open one side of the parchment paper pouch and gently slide the contents of the pouch on top of the salad greens. The white wine mixture makes an excellent salad dressing!
