Baked Parmesan Scallops over Wilted Garlic Spinach

​In our quest to add to our repertoire of one pan dinners we decided that it was about time we figured out a way to one pan some of our decadent New England Scallops.  Oh and aren't we glad we did.  This recipe took on a life of its own as we experimented with baking times and temperatures and we quickly realized that this dish could not only serve as a hearty main course, but would be an easy to prep and serve appetizer that would please a crowd.  Here is what you will need:


  • (2) 6 oz. portions of Dry Scallops
  • 1/4 c. white wine
  • 1 tsp. garlic powder
  • 6 tbsp. of butter
  • 1 tsp. Salt
  • 1/4 tsp. smoked paprika
  • 1/2 tsp. red pepper flakes
  • 3 1/2 tsp. of lemon juice
  • 1/2 tsp. black pepper
  • 1/2 c. finely grated Romano or Parmesan cheese
  • 3 cups of baby spinach
  • ¼ cup of chopped parsley
  • ¼ cup sliced garlic
  • 2 tbsp. melted butter
  • 1 cup prepared linguine pasta (if preparing a meal)
  • ½ cup sliced cherry tomatoes, salted
