Sheet Pan Lemon Dijon Shrimp and VeggiesThis recipe is a crowd pleaser! Perfect for a weekend cookout or any night that you have just a little extra time for prep work. Seafood Kabobs cook very quickly, but they require lots of prep work so pour a glass of wine and get to chopping!
Here is what you will need:
For the drunken glaze:
½ c. minced onion, ¼ c. chopped garlic, 2 tbsp. Butter, 1 c. pineapple juice, ½ c. water, ½ c. orange juice, ¼ c. cane syrup, ½ c. soy sauce, ½ c. brown sugar, 2 tbsp. Lemon juice, ½ tbsp. Rum, ¼ c. crushed pineapples
For the peppered rice:
2 c. jasmine or other long grained rice, 1 can (14 oz) unsweetened coconut milk, 3/4 c pineapple juice, 3/4 c water, 5 cloves of garlic, chopped, 1 ½ tsp. Salt, ½ tsp. Allspice, ¼ tsp. cayenne pepper, 1 tbsp. Butter, 2 c. diced red and yellow bell pepper, ½ c. diced red onion, 1 can pineapple chunks, chopped, ½ c. minced jalapenos or green chiles (milder)
For the kabobs:
1 c. cubed and sliced pineapple, 1 c. each red onion slices, red bell peppers, yellow bell peppers (1 in. pieces), 1 pack each Fish Fixe Shrimp, Fish Fixe Scallops (dried very well) Fish Fixe Salmon (diced uniformly 1-1.5 in pcs., Salt, Pepper, Paprika to taste.
