Halibut with White Wine Lemon Dill Butter Reduction

  • (4) 6-7 oz. portions of Halibut (skinless)
  • ¾ cup of dry white wine
  • 4 tbsp. ghee (or other high temp oil), divided
  • ½ cup shallots (finely chopped)
  • ½ cup salted butter, divided into tablespoons
  • 3 tbsp, lemon juice, fresh
  • Fresh dill, 2 tbsp. chopped plus 4 sprigs for garnish
  • Salt to taste
  • Pepper to taste
