Lemon Herb Salmon on Greek Salad

Fish Fixe Kitchen Original: Serves 2-4 people // Ready in 20 minutes

The bright citrus and tangy herbs of this lemon herb salmon will send you straight into summer.   

Lemon Herb Dressing:

  • Lemon Herb Dressing:
  • ¼ c. lemon juice
  • 1 tbsp. Lemon zest
  • ½ cup extra virgin olive oil
  • 4 cloves garlic
  • 10 fresh basil leaves
  • 1 tsp. Agave nectar or honey
  • 1 tblsp. Honey dijon mustard
  • 1 tsp. Oregano or Marjoram
  • ¼ tsp. Salt
  • ¼ tsp. Black pepper


Greek Salad:

  • tomatoes
  • Cucumber (thinly sliced on mandolin)
  • Carrots (thinly sliced on mandolin)
  • Red onion (slivered)
  • Kalamata Olives
  • Parmesan or Feta cheese
  • 2 servings of baby arugula and baby spinach mix


Salmon:

2-4 portions Salmon

salt and pepper to taste

Step by Step:

  1. Make the lemon herb dressing. Combine all ingredients in a food processor or blender and blend until emulsified - less than 1 minute.
  2. Rinse salmon fillets and pat dry. Then season with coarse ground sea salt and pepper. Place a small amount of lemon herb dressing in the bottom of a pan and put the salmon flesh side down to marinate.
  3. Prep the Greek Salad. Slice the salad accompaniments and toss with spinach and arugula mix then add desired amount of lemon herb dressing and toss. Place in refrigerator to cool.
  4. Sear the Salmon. In a hot oiled pan sear the salmon skin side down for 4-5 minutes then flip to flesh side and sear an additional 3-4 minutes until cooked through. Finish with a squeeze of fresh lemon juice and place on the salad. Top off the salad with freshly grated parmesan cheese.
