Stir Fry is a go to meal in the Fish Fixe Kitchen, yet we've taken the convenience level up a notch by making this favorite into a one sheet pan wonder. Get creative with your veggies and watch your cook times as each oven varies. If you find that your salmon or your veggies are cooking at different rates you can always remove one or the other to prevent over cooking. Here is what you will need:
For Spicy Ginger Salmon Glaze:
1 c soy sauce (or coconut aminos for GF)
5 dates, pitted and soaked 15 min. in warm water to soften
1-2 tbsp. Chili garlic sauce (depending on spice level)
2 tsp. apple cider vinegar
3 tsp fresh ginger, grated
2 tsp. Garlic powder
For Veggie Marinade:
1/4 c. soy
2 tbsp. Agave Nectar
1/2 tbsp. Yellow or white miso
1 tbsp. lime juice
1/2 tbsp. sesame oil
Pro Tip: Make sure your veggies are of similar thickness so they cook at the same rate. Enjoy!
