Lemon Garlic Scallops

Fixe Fish Scallops are a customer favorite. They are wild-caught, cold water North Atlantic sea scallops and graded, rinsed and blast frozen within days of harvest. Our scallops are “dry” meaning they have never been treated with any chemicals or preservatives.

The dryness of the scallops enable a firm, sweet texture to sear perfectly, retaining the moisture of the scallop and help to prevent overcooking.

Ingredients

You will need (2) 6 oz Fish Fixe Scallops

  • Olive oil
  • Salt and pepper
  • 2 tbsp butter
  • 3 tbsp finely chopped garlic
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp spicy brown mustard
  • 2 tbsp milk

Directions

  1. Prepare Fish Fixe Scallops by rinsing under cold water then place on a paper towel lined plate, placing another towel on top to soak up any additional moisture
  2. Allow scallops to rest at room temperature for 10 minutes
  3. Lightly season both sides of the scallop with salt
  4. Heat a medium sized skillet or cast iron over medium-high heat
  5. Add 2 tbsp of olive oil
  6. Once hot, place scallops in pan making sure to leave space between each one
  7. Use spatula to gently press scallop into pan to ensure direct contact
  8. Pan sear until golden brown, approximately 3 minutes
  9. Add 2 tbsp of butter to pan and allow to melt
  10. Flip scallops and spoon butter over scallops
  11. Cook 1-2 minutes
  12. Remove from heat and set aside
  13. In the same pan, make the sauce by adding garlic until fragrant, then add lemon juice and lemon zest
  14. Whisk together for a minute then turn off the heat and whisk in spicy brown mustard and milk
  15. Taste sauce and season with salt and pepper as desired
  16. Add scallops back to the pan to warm, then remove scallops
  17. Spoon excess sauce over the top and serve immediately

Tip: The drier the scallop, the better the sear!
