Mediterranean Haddock en Papillote

Mediterranean Haddock has all the flavors of an Italian seafood dish – tomatoes, artichokes, onion, lemon, capers and of course butter.  It’s a warm, satisfying meal and as always, takes less than 20 minutes to prepare.  To top off this incredibly simple meal, it only uses one dish so clean up is complete pronto! Serve it with rice or pasta and call it a night!

You will want to dry your Haddock well so any excess water is removed, allowing the flavors to evenly adhere to the fillet.


You will need 3-4 (6) oz Fish Fixe Haddock

  • 1 c of chopped tomatoes
  • ½ c of artichokes
  • 2 tbsp of capers (with a tablespoon of caper juice)
  • ¼ c chopped onions
  • Sliced lemons
  • Butter 
  • Wilted spinach, pasta or rice pilaf
  • Parchment Paper



  1. Thaw and prep 3-4 Haddock fillets according to the Fish Fixe bag
  2. Season with salt, pepper and garlic powder and set aside 
  3. Place a large piece of parchment paper in a 5×8 inch baking dish with enough extra paper to loosely seal around the fish, creating a big steam pocket
  4. Place the Haddock in the bottom of the baking dish and top with chopped tomatoes, artichokes, capers (with a tablespoon of caper juice), chopped onions, sliced lemons
  5. Place a dab of butter on top of each fillet and close the parchment paper to form a seal
  6. Bake at 425º for 12-15 minutes
  7. When the Haddock is opaque and flakes with a fork, it is fully cooked
  8. Remove fillets leaving the liquid behind and plate over wilted spinach, pasta or rice pilaf then spoon the vegetables and reserved liquid over the fillets and finish with a squeeze of lemon!
