Mediterranean Salmon and Potatoes is a delicious and nutritious dish inspired by the flavors of the Mediterranean region.  This recipe calls for 2-3 portions of the Fish Fixe Salmon which packs a powerhouse of 30g of protein, Omega 3 fatty acids, vitamin D, vitamin B12, vitamin B6, niacin, phosphorus, and selenium.

 

Ingredients

You will need (2) servings of Fish Fixe Salmon 

  • 1 lb of small yukon gold potatoes, quartered into 1/2″ pieces
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Freshly ground black pepper
  • 1 c campari tomatoes, chopped
  • (1) 12-ounce jar of marinated artichokes, drained
  • 1.5 c (packed) fresh parsley and dill, chopped fine
  • 2-4 tbsp Calabrian Peppers
  • 1/2 c Castelvetrano Olives
  • 1 lemon, halved
  • Parchment paper

Directions

  1. Thaw and prep your Fish Fixe Salmon according to package instructions
  2. Pre-heat oven to 425º
  3. Add the potatoes to a baking sheet and drizzle with olive oil, season with salt and black pepper.
  4. Toss to coat and arrange in an even layer
  5. Cook for about 15 minutes or until tender then
  6. Remove cooking sheet from oven and stir potatoes. Add the drained artichokes and chopped tomatoes over the potatoes
  7. Roast for another 5-7 minutes, or until the potatoes are starting to turn brown
  8. While potatoes are cooking, prepare the salmon by lightly drizzling all sides with olive oil, salt and pepper
  9. Remove cooking sheet from oven and toss potato mixture with a spatula
  10. Nest the salmon portions among the vegetables
  11. Bake the salmon and vegetables for another 10-15 minutes until salmon can easily flake with a fork
  12. Transfer the potatoes, artichokes and tomatoes from the pan to a large shallow dish
  13. In a separate bowl, prepare the herb mixture
  14. Add the finely chopped parsley and dill, Calabrian Peppers in brine, Castelvetrano Olives, 1 lemon squeezed, a generous pour of olive oil, salt and pepper, and combine thoroughly
  15. Taste and adjust with salt and pepper as desired
  16. Pour the herb mixture over the roasted potatoes and toss to combine
  17. Break up the salmon using your fork, and add on top of the shallow dish
  18. Serve and enjoy!
