Miso Lime Shrimp Soba Noodle Salad

Ingredients

You will need (1) 6 oz portion of Fish Fixe Shrimp
Miso Lime Sauce
  • 1/4 c Greek yogurt
  • 2 tbsp lime juice
  • 3 cloves garlic
  • 2 tbsp rice vinegar
  • 3 tbsp white miso paste
  • 4 tbsp sesame oil
  • 4 tbsp grape seed oil (can sub avocado)
  • 1 1/2 tbsp chopped ginger
  • 1/8 tsp cayenne pepper
  • 1 tbsp mirin (can sub sherry or marsala just add an additional 1/2 tsp sugar)
Soba Noodle Salad:
  • 1 package soba noodles
  • 1 c cooked soybeans
  • 1/4 c shaved green cabbage
  • 1/4 c shaved purple cabbage
  • 1/4 c julienned red bell pepper
  • 1/4 c shaved carrot

Directions

  1. Prepare Fish Fixe Shrimp by thawing and drying thoroughly with a paper towel
  2. Season shrimp with salt and pepper
  3. In a blender or food processor combine all the Miso Lime Sauce ingredients and set aside 
  4. Bring a heavy-bottomed pan to medium-high heat, add in 2 tbsp avocado oil and sear shrimp 2-3 minutes on the first side then flip and finish cooking on the second side
  5. Finish searing with a splash of soy sauce. Set aside
  6. Prepare the salad by combining soba noodles with vegetables and gradually stirring in Miso Lime sauce
  7. Toss to combine and enjoy
