One-Pot Shrimp + Rice

Ingredients

You will need (2) 6 oz. portions Fish Fixe Shrimp

Shrimp Seasoning:
  • 1 tbsp olive oil
  • Zest of 1 lemon
  • 1/2 tsp salt
  • 1/2 tsp dill weed
  • 1/2 tsp paprika
Vegetable Mixture:
  • 1/2 orange or red bell pepper
  • 1 c asparagus trimmed and chopped into 1-2 pieces
  • 1/2 c frozen peas
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 tsp crushed red pepper
  • 1 tsp salt
  • 1 tsp oregano
  • juice of 1 lemon
For heavy-bottomed pot:
  • 2 tbsp olive oil
  • 1/4 c chopped onion
  • 1/2 tsp salt
  • 1 cup basmati rice (or other long-grain rice)
  • 2 cup vegetable broth

Directions

  1. Prepare Fish Fixe Shrimp by thawing and drying thoroughly with paper towels
  2. Season with olive oil, lemon zest, salt, dill weed, and paprika
  3. In a medium-sized bowl, combine orange or red bell pepper, asparagus, frozen peas, olive oil, minced garlic, crushed red pepper, salt, oregano, and the juice of a lemon
  4. In a heavy-bottomed pot with a lid, bring olive oil to medium-high heat
  5. Stir in chopped onion,  salt, and basmati (or other long-grain) rice
  6. Add in vegetable broth and bring to boil for 5 minutes then reduce to simmer and place the lid on the pot
  7. Cook for another 10 minutes or until most of the liquid is absorbed by the rice
  8. Stir in the vegetable mixture and the shrimp
  9. Place the lid back on the pot and cook until the shrimp is cooked through and the vegetables are al dente – about 10 minutes
  10. Remove from heat and finish with chopped parsley and feta
