Parchment Paper Fish Packets by Marcia Smart of Smart in the Kitchen is a “choose your own adventure” dinner.  Also referred to as Fish “en papillote”, allows home chefs to set out the toppings and let everyone fill their own parchment paper packet. Besides the ingredients listed below, you can add pesto, thinly sliced red bell peppers, fennel, zucchini, red onions, shallots, green peas, capers or green olives.

Marcia appears monthly as a culinary expert on HoustonLife, an NBC lifestyle show in Houston. She’s also appeared on Great Day Houston and Hallmark Home and Family and has been interviewed for several podcasts and lifestyle websites.

You will need (4) 6-ounce portions of snapper, halibut, haddock or salmon

  • Optional fillings: cherry tomatoes, fresh herbs (basil, dill, chives, or parsley) or thin green beans
  • 2 tbsp extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 lemon, quartered
  • Parchment paper sheets
  • cooking bags


  1. Thaw and prep your Fish Fixe according to package instructions
  2. Preheat oven to 400°
  3. Select two fillings and divide them among 4 squares of parchment paper or place them inside a parchment paper bag
  4. Sprinkle fish with salt and pepper; drizzle with olive oil and squeeze lemon on top
  5. Place fish on paper or in bag
  6. Add any optional toppings – chef’s choice!
  7. Bring parchment paper sides up over mixture; double fold the top and sides to seal, making individual packets
  8. Place packets on a rimmed sheet pan
    Tip: I use a sharpie to write names on the outside of each parchment packet so everyone can claim their creation
  9. Bake at 400° for about 15 minutes or until a thermometer registers 145° when inserted through paper into the middle of the fish filet
  10. Place each packet on a plate and cut or tear open, being careful of steam
  11. Sprinkle fish with additional fresh herbs and lemon juice, if desired
  12. Serve immediately
