Roasted Butternut Squash Puree

You’ve asked for it, and we’re delivering! This is the start of a series of sides that can be paired with many of our sea-proteins. This Butternut Squash Puree (the simplest of simple) is best paired with scallops, shrimp or any white fish.  The texture is silky smooth and you can dress the puree up with chopped dates, fresh herbs or brown butter for added layers of flavor.

Ingredients

2 – 3 c of Butternut Squash, diced

Extra Virgin Olive Oil

Salt

Cinnamon (optional)

Blender

 

 

Directions

  1. Pre-heat oven to 425º
  2. Dice your Butternut Squash into 1″ cubes (or purchase from Costco the large container of diced butternut squash)
  3. Add squash to a sheet pan, toss with olive oil
  4. Roast in the oven for 20 minutes
  5. You’ll know the squash is ready when you can squash it between your fingers
  6. Transfer the squash to a blender, puree and add 1/2 tsp salt.  Taste and add more if you desire
  7. Optional: Add a dash of cinnamon, chopped dates or fresh herbs
  8. Transfer to a shallow bowl and top with your favorite seafood

Costco Hack: Buy a large container of chopped butternut squash for a quick and easy weeknight meal. Bake your fish right along side of the butternut squash for a low mess dinner!
