Ingredients

You’ll need (1-2) servings of Fish Fixe Shrimp

Salad

  • 1/2 cucumber sliced
  • 1 c snow peas, cut on diagonal
  • 1-2 c broccoli, chopped into small pieces
  • 1 jalapeño, sliced
  • Tajin
  • Salt
  • Olive Oil

 

Lime Cured Shrimp Mixture

  • Shrimp, tails removed and diced into bite-size chunks
  • 1/4 c lime juice
  • 1 jalapeño, diced and seeded
  • 1/2 red onion, sliced
  • 1 tsp salt
  • 1 tsp Tajin

 

Optional Finishing Touches:

  • Avocado Cream Sauce (see recipe here)
  • Avocado, sliced
  • Cotija cheese
  • Lime, freshly squeezed
  • Cracked pepper
  • Cilantro

Directions

  1. Thaw and prep the Fish Fixe Shrimp according to the product bag instructions
  2. Remove the tails, and dice into bite-size pieces
  3. Add the shrimp, lime juice, jalapeño, red onion, salt and Tajin together and toss
  4. Cover the dish and refrigerate for 30 minutes or more letting the shrimp cure
  5. In a separate dish, add the cucumbers, snow peas, broccoli, jalapeño, Tajin, salt and olive oil together and toss
  6. Taste vegetables and adjust to your liking
  7. If you’re adding the Avocado Cream Sauce,  prepare now and spoon it onto the bottom of a small serving tray
  8. Next, layer the tossed vegetables ontop of the Avocado Cream Sauce
  9. And finally add the cured shrimp mixture to the top of the dish
  10. Finish with touches such as avocado slices and Cotija Cheese and enjoy!
