Snapper with Tomato Dill Vinaigrette

Snapper with Tomato Dill Vinaigrette uses simple ingredients that you probably already have in your pantry right now.  Win dinner with this 15-minute meal + get in one of your two servings of seafood this week.


You will need (2) 6 oz portions of Fish Fixe Snapper (Or Haddock!)

Tomato Vinaigrette

  • 1 Heirloom tomato diced with the juices
  • 1/2 cup sweet tomato medley – chopped with juices
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp of dill
  • black pepper to taste
  • Olive Oil
  • Butter
  • Feta Cheese


  • Prepare Fish Fixe Snapper (or Haddock) by thawing and drying thoroughly with a paper towel
  • Season both sides of the fillet with sea salt and pepper, then set aside
  • In a medium bowl, prepare the tomato vinaigrette by combining heirloom tomato diced with the juices,  sweet tomato medley – chopped with juices, lemon juice, olive oil, salt, dill, black pepper to taste
  • In a medium pan, bring olive oil to medium high heat
  • Place fillets in pan and sear until browned on bottom, about 3 minutes per side
  • Flip fillets and add butter to the pan
  • Spoon the butter over the fillets as they continue to cook until they can be flaked with a fork
  • Remove fillets from pan and plate them with the butter from the pan
  • Top the fillets with the tomato vinaigrette and a sprinkle of feta cheese
  • Serve immediately
