Spicy Coconut Lime Soup with Halibut

Ingredients

You will need (2) 6 oz. portions of Fish Fixe Halibut and (1) 6 oz. portion of Fish Fixe Scallops (substitute for Shrimp)

  • 1 lime⁠
  • 2-3 tbsp coconut oil⁠
  • 1 white onion finely chopped⁠
  • 3 tsp salt⁠
  • 1 c finely chopped carrot⁠
  • 1 finely chopped red bell pepper⁠
  • 1 jalapeño seeded and finely chopped⁠
  • ¼ c finely chopped garlic⁠
  • 1 ½ tbsp tomato paste⁠
  • 4 tsp paprika⁠
  • 2 ½ tsp cumin ⁠
  • 14 oz can chicken stock⁠
  • 1 ½ c of chopped tomatoes⁠
  • (2) 14 oz cans coconut milk⁠
  • ½ tsp cayenne pepper⁠
  • 2 tbsp lime juice⁠
  • 1 tbsp honey⁠
  • ½ c chopped cilantro⁠
  • Fresh lime zest⁠

 

Directions

  1. Prepare Fish Fixe Halibut and Scallops by thawing and drying thoroughly with paper towels
  2. Cut Halibut and Scallops into 1 in uniform pieces and toss in the zest of 1 lime and a ½ tsp salt 
  3. Sauté Halibut and Scallops in coconut oil, finely chopped white onion and 1 tsp of salt
  4. Turn down heat and add in carrots, red bell pepper, jalapeño and garlic
  5. Cook until vegetables are soft
  6. Stir in tomato paste, paprika, cumin, 1 1/2 tsp salt, chicken stock, chopped tomatoes
  7. Once carrots are soft add in coconut milk, cayenne pepper, lime juice and honey
  8. Stir in salt to taste
  9. Stir in Halibut and Scallops and cook 7-10 minutes until cooked through
  10. Finish with cilantro and top each serving with fresh lime zest
